Turbulence in Coffee
One important aspect of making pour overs is making sure all coffee grinds are making contact with hot water on all surfaces. If done properly this can increase the TDS and the coffee taste richer.
The amount of turbulence and agitation when pouring water for pour over effects how the coffee tastes. You can achieve this by simply stirring the grinds after you've poured water. Or you can adjust the height and speed of pouring.
By experimenting with different adjustments you will be able to find the way that suits you. I prefer creating turbulence from pouring water alone, for me it has consistency from cup to cup.
